Insights:
From 1993 Paul Boutinot tried to survey the South African wines and with his involvement in the False Bay Vineyards he tried to make it with little intervention, unlike the mass produced wines. Make use of the well established vines, wild yeast fermentation and so on. This vineyards falls under the Waterkloof estate and the estate produces a wide range of wines. About half of the estate is left intentionally in its original habitat. WO – Wine of Origin.
