Introduction
In Veneto, Italy’s most productive wine region, north east and within, Soave is its most significant wine zone. 80% of the wine produced goes straight to co-op’s with no individual wines produced. Soave is the DOC, (established officially in 1968, even though the region was already recognised in the 30’s, together with Chianti) and within it holds two other DOC’s, Soave Classico DOC (from the more original production zone) and Soave Superiore DOCG.

The grape that makes the Soave is Garganega, even though in some instances Trebbiano di Soave (verdicchio) and Chardonnay come in to play, within certain percentages. The region is to the east of the town of Verona and the producer of this Soave is Sartori, in the town of Negrar and actually based in the centre of Valpolicella Classic country. The roots of this winery are in the wider Verona region, producing a range of white and red wines; this white ‘just’ being a Soave DOC.

Wine specifics
Ready to drink. Young, fresh, dry, fruity hints of apple. Served with light dishes, salads, fish starters, fish dishes, just on its own. Obtained in the Netherlands and Soave may be available in the UK. DOC seal around the neck of the bottle. Cork.
Insights:
Sartori (di Verona) was established in 1898 and these days they work together with another winery in the region, sharing matters, such as production, marketing and so on. Piertro Sartori bought his own vineyard at the time, to supply his own hotel, developed obviously a bit more than that and they are now in their fourth generation in the family, with the Verona region always at the centre of their efforts. A large part of their wines are being exported.
