Introduction
Cavino is the maker, based on the peninsula of Peloponnese, linked to the mainland, just west from Athens. On the peninsula this winemaker has its winery in Égio (Aigio), north Peloponnese, in the wine sub-region of Pátra. The winery was established in 1958 and in 1999 obtained nearby Domain Mega Spileo, linked to the historical monastery vineyard of Mega Spileo. Their official records date back to 1550 and producing wines from this estate as well.
Cavino is award winning and has become one of the largest exporters of the Greek wines, 70 % of its production, as well as having invested considerably in its own full wine and distillery making facilities, storage and distribution. The distillery produces vast amounts of ouzo and tsipouro (pomace brandy). Another brand of Cavino is Deus, with a whole line of different wines. This wine falls under Cavino Classics, standards, with a little ‘old temple like’ logo.

Insights:
The Greek wine industry in general is on the up, with the current economic situation not helping the situation. Nevertheless European money has been invested; winemaking has improved with influences picked up from abroad, with a large focus on export. Pomace is the solid remains of grapes, olives or other fruit after pressing it for juice or oil. It contains the skins, pulp, seeds and stems of the fruit. For brandy they use the grape pomace. The term comes up in English cider production as well. Other terms: imiglykos – semi-sweet, glykos – sweet, imixiros – semi-dry, xiros – dry.
