Introduction
Casa Vinicola Botter Carlo & Co in the town of Fossalta di Piave near Venice is the producer. The family owned company was founded by Carlo Botter in 1928 as a bulk merchant and is now in its third generation. The company became more successful after the Second World War, starting to sell wines in bottles. Within their extensive range, this one is classified as one of their special ones, whilst Appassimento method wines are increasingly becoming more popular and more widely available.

With the hand harvest in (early) October, the selected grapes are dried for around 2 weeks, with the grapes still on the cut vine. The period of drying may vary, but then the pressing starts and the rest of the usual process, trying to extract as much fruitiness out of the grape as possible. This way of making wines is familiar with the making of the renowned Amarone wines. In this case aging takes place for 3 - 4 months in oak, before bottling, adding the vanilla and spice.

Ready to drink and can keep for a while. Fresh, fruity, balanced, smooth, full-bodied, hints of cherry, vanilla, spice. Serving all meats, pasta, stews, roasts, grills, hard & blue cheeses. Obtained in the Netherlands, may be available in the UK. Cork. Embossed bottle. Grapes Corvina 40%, Merlot 60%.
Insights:
Veneto, an area widely around the town of Verona, is Italy’s most productive wine region, with sub region names such as Bardolino, Valpolicella and Soave, each with their own classification(s). Most of the grower’s wines, about 80%, goes straight to Coop’s, in line with restricted harvest quota’s, with limited or no ‘personal productions’ of their own. Appasimento is often linked to (Valpolicella) Ripasso; when the pomace left from the appassimento (for making Amarone) is partially dried and re-used in the wine making.
